New improved PBM&Lettuce
Today's Culinary Tip

A very good alternative the the
peanut butter, lettuce, and mayonnaise sammich is using a nice fresh,
supple wheat tortilla instead of bread. You're welcome.
FYI - tortillas are loaded with calories unless you choose them wisely. Using one could add 300 calories to your sammich! Those sandwich thins are a much better choice. They come in whole grain and are actually quite delicious. I lightly toast them before spreading the pb & mayo - and then I add some golden raisings to give it an edge!
Your reply to Gayle's comment reminds of a story Art Donovan used to tell. The guys on the Colts bet on an eating contest between Gino Marchetti and Don Joyce. Marchetti ate something like 25 pieces of chicken, Joyce got to one more than Marchetti,but said he was still hungry and ate like 35 pieces of chicken. After he was done,Joyce said he wanted to wash it down with some iced tea. Before he drank the tea, he put some saccharin in it. When the guys asked him what he was doing, he said "I'm watching my weight."
It was a boyhood staple become comfort food. The bread and mayo aside, it's quite a nutritious lunch. And yes, it is improved by bacon, but its preparation destroys the spontaneity.
Heat peanut oil in pan, add 3-4 oz chopped fresh chiles. At 30 second intervals, add, 3 oz raw white onion, then 1 oz minced ginger, then a couple garlic cloves, 1 pound Skippy Super Crunch peanut butter, coconut milk to thin to ketchup consistency. Heat, add juice of 1/2 lime. Can wait a day for flavors to meld, if necessary, adjust spices for your personal taste. Great on pasta, rice, meat, chicken, fish, raw or cooked veggies.
This is an easy version I made up of satay or Gado Gado sauce for those without access to an Asian market.
The entirety of my second grade, school lunches consisted of peanut butter and mayo sandwiches on white bread, brought from home and Jungle Juice fruit punch to wash it down. Why yes, I am from the South, how did you know?
Ever since I was a kid, I've been partial (possibly over-partial) to crunchy peanut butter, a thick slice of bologna, and a slice of sweet onion, all on white bread. And to those who are already saying, "yuck", try it, you might like it.
I thought that I had invented the peanut butter and mayo sandwich when I was 4 or 5 we were out of jelly... and most everything else, at the time. Thanks for the flashback... RAK
I needed some tortillas recently and, since I'm trying to get less stuff with soy and EVERY brand or shortening I looked at had the stuff in it, I wondered what to do. And my eyes did light on a container on the shelf.

Peanut butter and bacon do indeed make an excellent sandwich! Try it on lightly toasted whole wheat.

For me, it's peanut butter & mayo on sourdough bread with raw sliced onion in the middle. But then I'm not a moderate.
