I STG - MoSup tried one of this new batch and decided what she wanted for dinner was a nice salad and some bagels. When I asked her what I should change, she said "nothing." Damn I'm good.
I used to visit a bakery in the middle of the night. They made bagels. The dough was dispensed from a double coaxial cylinder thing like the guy at McD's uses to make pancakes. When risen, the bagels worked their way down a 10 foot long trough of boiling water and then into the oven. Fantastic when right out of the giant ovens; nothing better except for titty bread (ask any baker about that; they're all pervs. Come to think of it, so are butchers.)
1. You don't need vegetable oil unless you want them soft for a week or two. 2. Kinda like making pancakes, don't over mix. 3. Don't overproof the dough. 4. I like mine with some cinnamon and raisins. Thanks. chief oy vey ole'
