Hey mom, can we have more cottage cheese?

When I was a kid, back in the 50's, my Magyar mom would give me cottage cheese with sour cream on top with a little sugar for desert. Loved it and still do!!

MoSup's grams was Polish and a dress maker. She loved pierogis but fretted about her figure so made them with cottage cheese and chives. That became the family recipe. Before marriage I had never had a pierogi in my life, nor had I willingly ate cottage cheese. Now those cottage cheese pierogis are a family favorite. I mean, the most favorite comfort food food of everyone.

My wife and I regularly mix a pint of cottage cheese and a 15-oz. can of pineapple chunks (drained). And sometimes we mix it with small shrimp, chopped celery, chopped green peppers rings, a couple of chopped green onions, and a few chopped radishes. Makes for a great light supper, especially on a warm summer evening.

Out of desperation, I once made a calzone with cottage cheese on the bottom, then what little cheese we had on that, then red sauce with veggies. On the rack, turn it over so the cottage cheese is on the top. It bubbles into the cheese and sauce and is amazing.

Haven't been that poor in over 30 years, but still make calzones that way. Even my Italian-American mother in law loves it.

my Magyar mom used to put Lipton onion soup mix in it. Next day we would dip chips in it or put it on a half of a green or red pepper.
