Spicy Garlic Lime Chicken

Spicy Lime ChickenSpicy Garlic Lime Chicken

Ingredients

    * 3/4 teaspoon salt
    * 1/4 teaspoon black pepper
    * 1/4 teaspoon cayenne pepper
    * 1/8 teaspoon paprika
    * 1/4 teaspoon garlic powder
    * 1/8 teaspoon onion powder
    * 1/4 teaspoon dried thyme
    * 1/4 teaspoon dried parsley
    * 4 boneless, skinless chicken breast halves
    * 
    * 2 tablespoons butter
    * 1 tablespoon olive oil
    * 2 teaspoons garlic powder
    * 3 tablespoons lime juice

Directions

   1. In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
   2. Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.


I'm the master chef here and will quite often just throw things together that are in the larder. Occasionally I come up with something that MoSup goes nuts over.  The problem is I don't keep notes, so when it she asks for it again down the road, I usually can't reproduce it. 

So it was that she asked a few weeks ago for "that lime chicken you made."  I had no remembrance of ever making lime chicken - no wait.  I bought some jerk seasoning a few years ago and made something with it.  I bet that was it.  Anyway, I wasn't in an experimental mood so I Googled "Lime Chicken," and it took me here.  I made it. 

HFS!  MoSup went nuts, and I wound up eating twice what I thought I wanted - it was that good.  Since then she's suggested it every other day, and so on Thursday I did a repeat.  HFS!  I'd  forgot how good it was.  I bet it would be great for catfish too.

Sounds yummy!
I really like chicken with citrus.
One of my dishes is Chicken breasts halves cooked in a gunboat (with lid) in the oven,(low and slow to tender)cooked with lemon juice,a little water, olive oil, oregano,Whole black olives.(I use some chicken soup base in the mix in lieu of salt)
Serve with steamed rice and kale (cooked down dry)
After chicken is done I thicken the broth with a little corn starch slurry.(I like a little soy sauce on mine...to each his own on this)

Yum! But the Lone asterisk bullet will forever haunt me - was some vital ingredient left out? ::anally retentive::

Dang!.....I left out garlic.
It sure ain't the same without garlic!

The Lone asterisk bullet missing ingredient was a quarter cup of tequila. Or, perhaps half a cup. I forget. Tequila works that way, ya know. Your mileage may vary.
