Carrot Layer Cake

Whipped this up this morning.  Saw it on AmerTestKitches and—well I was hungry so what the hell.  The breakthrough differences here are (supposedly) that carrot layer cakes are almost impossible to apply the obligatory butter-cream cheese icing (too crumbly).  The technique here is to bake it on a cookie sheet (just 20 minutes), and slice it into one-third layers,  The frosting uses powdered Buttermilk to solve some other problems.  Anyway, it took anbout $10 and two hours start to finish (and another hour cleaning up). There you have it. It's damned good, and I could eat the icing by itself.  I put it in the freezer so I don't eat it before MoSup comes home from Florida (she loves carrot cake).

You should recommend that the wife purchase a carrot cake from a Publix supermarket while in Florida. It doesn't get much better than that. Hope yours is a huge success. BTW, pecans are sorta like bacon in that they make anything better.

As a Floridian, I'll second that. Public, where shopping truly is a pleasure. Giant/Eagle just can't compare.
