Spinach Salad

Today's Secret Salad
SPINACH SALAD

2 BUNCHES SPINACH (I USED ONE "BAG")
2 PACKAGES TOP RAMEN NOODLES, CRUSHED
1 PACKAGE SLICED ALMONDS
1/4 CUP SESAME SEEDS
1/2 CUP BUTTER
1 BUNCH GREEN ONIONS
1/2 CUP OIL
1/4 CUP SUGAR
2 TABLESPOONS SOY SAUCE
1/4 CUP VINEGAR

SAUTE RAMEN NOODLES, SESAME SEEDS, AND ALMONDS IN BUTTER UNTIL TOASTED.  COOL.  TO MAKE DRESSING, MIX OIL, SUGAR, VINEGAR, AND SOY SAUCE.  TOSS SPINACH AND ONIONS WITH TOASTED INGREDIENTS AND DRESSING. 
I didn't have almonds so I used pine nuts, no onions either so I substituted fresh cut chives - onions would have been better.  Mother Superior could eat this 2-3 times a week, me not so much.  Also, I think that's way too much butter.  In the future I'll use spray butter so the crunchies stay crunchy.

I'd either cut way back on the butter, or eliminate it altogether and use olive oil- more flavor. This recipe has a very similar clone, with Napa cabbage (bok choy) in place of the spinach...
