Pizza crust trick

This invention is just two hours old. 

Pizza dough.
  • 1.5 cups flour - or whatever
  • splash olive oil
  • splash salt
  • water
In a bowl use a fork to mix it, adding cold water until dough is crumbly.  Then add just enough water so it stays together.  Flop it down on a board and push it out out with your hands.  Splash with flour to keep it from sticking.  When it's about the size of a dinner plate, fold in half; push it out again, fold in half, then one more time.  Take your round pizza pan (if it's not round, this next trick - the secret invention - won't work). 
Coat pan with spray oil.  Flop the dough in the middle and try and distribute it in an even circle by pushing it out with your hands.  Now, take that spray oil can and use  it as a rolling pin.  As you roll it, the can will naturally want to follow the edge of the pan .. see the picture.  You'll end up with a perfect thin crust pizza dough.  Don't dock it (pricking with a fork is called docking - forking with a prick is inappropriate).  Put it in the oven until it is just brown -- took me about 20 minutes from a cold start.  Remove, and flip the crust over in the pan, then do your sauce, cheese, etc. and bake until the cheese is just browning.

The crust will be flaky (because of the folding), and crisp.  Best ever. You're welcome.  Time:  from thought to mouth = approx 40 minutes.

My pizza dough recipe uses 1/4 cup of olive oil. Makes 2 crusts which I roll out very thin and bake on a screen over a stone. I have to beat people off with a club when they know it is pizza night in Golden. I do like your procedure though. Nice twist. I'll try that next time.

Bronco games are usually a time for pizza, of course we've got a bye at 2-1. Next up are the Ravens on Monday night, pizza for sure. I'll try it than.

Gonna try that out this weekend. Going to go to the drivein movie Friday. We have some great driveins and there packed there making a big comeback great food to. I will do the pizza saturday. Another Schlong innovation.
