Crunchy Fish

Today's Secret Tip
Do you have bags of chips that only contain the bottom dregs, all crumbled and worthless? We do. Last night on a whim, I took all of ours and dumped them in the food processor. Whirr-whack. Used them to bread the catfish. Holy crap, it was fantastic (that from Mother Superior). Very crunchy, very flavorful. You're welcome.

I used to take those corn chip dregs and mix with eggs,cheese,chopped bell pepper,onion(sometimes chopped black olives) and some green hot sauce.Fry it in an iron skillet(use enough oil to keep from sticking) til set and then under broiler to set the top.Make sure it's set good and then use a plate to flip it over.Slide back in skillet and cook til done.Sorta Mexican frittata.Have with your favorite salsa.......Ausgetzeichnet!
