Health Incentives

Stuff I Learned from  Oprah

Like many of you, MoSup and I begin the new year vowing to get in shape for the wedding.  Our biggest enemies are carbs, and a sweet tooth in that order.  Earlier last week, with the the last of the Christmas cookies,  that sweet tooth bit Mother Superior.  This is what I concocted on the fly, and she liked it so much that it's become the nightly after-dinner staple.

Ingredients

1 mini flour tortilla - 80 cal
½ small apple - 36 cal
1  walnut - 20
7-8 Craisins - 20
Butter spray - 0
Sprinkle cinnamon

Total - 156 cal approx.

I cut the apple into a few pieces and throw the whole deal in the food processor with a tad of cinnamon.  Grind up into small pieces - not puréed.

Spoon about ½ onto tortilla, add a few craisns,  chopped walnut, and roll.  Spray the packet with butter and cook crispy in toaster oven, skillet, or panini maker.
