DVDShrink is an excellent tool; I've used it for some time.
Another one you'll want to add to your arsenal is SUPER: http://www.erightsoft.net/SUPER.html
It will convert pretty much any type of video to any other type and extract the audio and video streams from it as well.

It took me 22 minutes to Shrink DVD Ken Burns's "The War," Disk1, down from about 7.4 GB to 3.8 GB, and another 20 minutes to burn the DVD, which I am now watching. I'm a happy boy.
Dang, Rodger, you must have a bad-ass PC. How much memory/CPU does that thing have?
(for me, a 2-layer to single-layer compression like you've described takes about 40 minutes.)
My 5 year old HP 873N still moves smartly behind its 2.524 Mhz Intel, and 1 GB mem.
