Bacon Turkey

Bacon-Wrapped Turkey

Just as a point of info - the technique of draping a roasted meat with fat (for which bacon pretty much qualifies) is called "barding."
I don't know why.

BlogDog~~ Thanks for the info/question that set me to surf. Always looking for the root words:

–noun
1. Armor. any of various pieces of defensive armor for a horse.
2. Cookery. a thin slice of fat or bacon secured to a roast of meat or poultry to prevent its drying out while cooking.

See? BACON ARMOR for poultry! Nice. :-]

for those of you that never liked Brussels Sprouts:

1 lb brussels sprouts: trimmed & halved
1/2 cup of sour cream
2 tablespoons raw horseradish
1/4 pound bacon: cooked & crumbled
8 tablespoons pine nuts: roasted golden brown - sauteed w/ 3 cloves garlic - do not burn

steam sprouts.
add remaining ingredients & heat moderately.
mix.
yummmmm

or did i get that recipe from here?
doesn't matter - worth repeating.

"Larding" would be the insertion of fat within the lean.
