I just stumbled upon it (the recipe) this morning. I may have to make turkey again soon.
Tim
I'm going with a nice plump Perdue chicken.
Just as a point of info - the technique of draping a roasted meat with fat (for which bacon pretty much qualifies) is called "barding."
I don't know why.
BlogDog, did you mean "larding"? I understand barding to be armor for a horse.
BlogDog~~ Thanks for the info/question that set me to surf. Always looking for the root words:
–noun
1. Armor. any of various pieces of defensive armor for a horse.
2. Cookery. a thin slice of fat or bacon secured to a roast of meat or poultry to prevent its drying out while cooking.
See? BACON ARMOR for poultry! Nice. :-]

Mmmmmm! Bacon. A condiment made of meat that you put on meat!
How 'bout Armor bacon? My Grandma worked at the Armour plant in Sioux City.

"Larding" would be the insertion of fat within the lean.
