Tortilla Pizza

Ten minute thin crust pizza


  Put a flour tortilla into an oiled skillet and cook until bottom looks like this.
Put cheese and toppings on.

  Remember, onions and mushrooms are mostly water, so throw themwhat the hell, throw everything (but the cheese) into the skillet until they've had some shrinkage.  Remember though, this is thin crust so a few toppings are best. I like spinach, mushrooms, onions and pepperoni.

Put pizza under a broiler for  a few minutes
until you like the color.

Eat.  Whole process takes less than 10 minutes.  Said and done.

Pad Thai sauce





 PAD THAI SAUCE:
1/3 cup good-tasting chicken stock
3 Tbsp. rice vinegar OR white vinegar
1 Tbsp. lime juice
3-4 Tbsp. brown sugar
2 Tbsp. fish sauce
1 Tbsp. soy sauce
1/4 tsp. cayenne pepper
1/8 tsp. white pepper



We had a taste for Tad Thai last night but didn't have any of the delicious bottled sauce we normally use.  So, I used this recipe, and it was outstanding.  The tastes were bright compared to the bottle, let alone the powdered stuff, so this is on our culinary map.  But that's not what I wanted to tell you.  

This Pad Thai sauce is so freaking good that, I swear, I could drink it out of a glass.  In fact, I took several TBSP of the stuff,  and only stopped because I didn't want to make more for dinner.  If I was a bachelor I'd have just had the sauce and shrimp for dinner.  I think it will make an excellent dipping sauce for chinese dumplings too.  Also. I stock candied ginger because it will keep forever, grates well, and has a great freash taste.

Getting ready for tomorrow's family Christmas.  Made the Indoor pulled pork recipe, with one change. The written instructions offer two sauces; this time I tried number 2,  and horry clap!  This stuff is so good that I could drink it,  except I'd get a UTI sure as hell.  I'm not going to pull it until tomorrow; hope it doesn't dry out any, because it's Five Stars as it is. 

South Carolina Mustard BBQ Sauce

  •  ½ cup of defatted juices
  • ½ cup white vinegar
  • 1 cup yellow mustard
  • ¼ cup packed light brn sugar
  • ¼ cup Worcestershire sauce
  • 2 tsp hot sauce
  • 1 tsp salt
  • 1 tsp pepper
