What I did during recess




Man did I get sidetracked.  We have grandaughter #2 staying with us for a few days, and she came in while I was reviewing this video to go with this post on the chicken I made last night.  Res Ipsa LoquitorShe crawled up on my lap and watched, entranced.  When it ended she  said (pointing to the YouTube side panel) :play that one.  Which turned out to be Thai chicken.  And then another, and another until we had spent nearly 90 minutes wathing recipe esoteica, and she showed no sign of getting bored.

MoSup finally took her up for naptime, and that sounded like a good idea so I had one too. 

BTW, this chicken, because of its very crispy skin and very moist and tender meat may be the best I've ever tasted.  Took under one hour to cook. That salt and baking powder rub is priceless.

Ahh! America's Testicle Kitchen. I really like that show. They really get into the nuts and bolts and teach you cooking.

Used to be, most shows were, "Look at the great stuff Famous Chef can make. Don't you wish you were as good as Famous Chef?" I hated those shows and wished they would go away. I got my wish. Now most the "cooking shows" are competitions. "Look at these luscious dishes make by Unknown Chefs out of bubblegum, fish heads and used shoe laces." Or they are, "Famous Chef rescues incompetent restauranteur by calling him vile names". I hate them even more.

"Cook's Illustrated" is their magazine and I finally had to give up my subscription as my addiction to food porn was making my life miserable. OK, not miserable. But I eat too much already.
Still, it's a great magazine.

I began reading your blog in 2004. I remember because I was in a wheel chair for 3 mos, out for 4, and back into for an addition 3. I had plenty of time to cruise the internet ... and I can say that you have -never- led astray on a single cooking post. You are the Boss Man!

P.S. Grandaughter #2 has great concentration for her age. She is sure to be a real smarty pants. In a good way, of course!

Of late I've been telling folk to forget watching any cooking channel, and turn to youtube. It's an incredible resource, and available to show what you want to cook right now. While this is the first time to see this one on roast chicken, I've seen several others, and my roast chicken is quite tasty because of it. I also managed a quite respectable fried rice first time, after watching several videos.

Two things I'll never try tho I love them: Pad Tai and Chicken Biryani. Way too much work for both.

By the way Juice - way back I made an obscure, inside only to me, reference to meatloaf and you caught on. It was then that I knew we were kindred spirits. Well, that and the beach blanket bikini picture *blush*
