I'm in total agreement. I make my own whole wheat bread, and whole wheat, dammit, will NOT rise without the addition of gluten. While I feel sorry for the 7%, don't cast the sideways glances at me when you find I'm a gluten lover. So, there! And PULL UP YOUR PANTS!

I can't eat gluten because it messes with my neurological problems related to concussions. Not that I ever go pain-free but gluten makes me feel drunk without the fun parts. I've tested this a number of times over the years with the same results. I eat the gluten-free substitutes for bread and pasta. The bread is horrible but the pasta is pretty good. I also gave up dairy to see if that might help. It didn't but I decided to stick with that because my metabolism died with middle age and I don't want to eat my way into fatty fatness.
