Firefox for OS X is a Carbon application. It's pretty much identical to the Linux and Windows versions.
Camino is Firefox ported to Cocoa. It's slightly out-of-date and Firefox-type extensions are not implemented.

I use Firefox with Windows and OS X. I use the same extension set for both. For the record: FlashBlock, NoScript, Disable Targets for Downloads, CustomizeGoogle, and Sage.
