Since this guy apparently doesn't grok the differences between combining naturally occuring foodstuffs in a recipe and manufacturing foodstuffs in vitrio, I think why he can't get funding is becoming clear. Yogurt, beer, wine, salting and pickling are all methods devised to store and extend the life of naturally occurring food stuffs.
And most of the above are definite improvements.
